Twice Baked Sweet Potatoes

Like any other day, I was craving a baked potato. Since the boyfriend loveees sweet potatoes and I love regular baked potatoes, we usually seem to only have the sweet ones in the house (funny how that happens huh ladies?). So I got to thinking..... twice baked sweet potatoes.
 
 
Ingredients: (I used this much only making one sweet potato, feel free to double, triple or however many -oople for however many potatoes you will make.)
 

  • 1 sweet potato
  • 1 Tsp. coconut oil
  • 1 1/2 Tsp. brown sugar
  • a few dashes cinnamon sugar
  • 2 handfuls of marshmallows

Stab your sweet potato several times.
 
 
My favorite thing about the microwave? "Baked" potato button ;)
Make sure to flip your potato half way to cook evenly.
 
 
Gather your ingredients.
 
 
 
Add your coconut oil and brown sugar to your mixing bowl.
 
 
Slice open your cooked potato.
 
 
Scoop out the goodies and place them in your mixing bowl.
 
 
Mix up the potato, sugar and oil.
 
 
 
Spoon the mixture back into the potatoes.
 
 
Bust out the marshmallows. Can't forget to share with the biggest marshmallow fan out there.
 
 
He loves them.
 
 
Scatter your mellows on top of the potato mixture.
 
 
Pop them in the oven: 350 degrees for 20 minutes or until the marshmallows are toasty.
 
 
MMmMMm enjoy the smell of fall in your home
(a little treat for living in south Florida in July)
 
 
Take them out, sprinkle cinnamon sugar on top and let them cool (or try to).
