Breakfast Eggrolls

Good Morning friends!
I just love a hot cup of coffee on a rainy morning.
 
 
Why don't we ever have egg rolls for breakfast?
Stuffed with cheese, veggies and eggs, sounds like the perfect breakfast for me..
 
 

Ingredients:
  • (8) wonton wrappers
  • 1/3 cup shredded cheddar cheese
  • 1/2 green pepper, diced
  • (1) sweet onion, diced
  • (3) slices turkey bacon, crumbled
  • (2) eggs
  • salt and pepper
 
Add diced peppers and onions to med-high heat in a skillet.
Season with salt & pepper.
 
 
Cook up your turkey bacon (I just throw mine in the microwave).
 
 
 
Shred the bacon and add it to the skillet.
Turn the heat down to low at this time.
 
 
Add your eggs, season with salt and pepper.
 
 
I just love these wonton wrappers.
 
 
Place your cheese down..
 
 
Add your skillet mixture.
 
 
Wrap and place on a greased pan to bake.
 
 
Spray the egg rolls before placing them in the oven.
 Bake at 400degrees for 16 minutes.
 
 
 They even show you a little wrapping guide :)
Reminds me of when Subway wraps up their subs.. lol


 
MmmmmM look how crispy the edges are.
 
 
Serve with salsa, ketchup or I had mine with sour cream.
P.S. The boyfriend tore up 5 of these. This is how I know they're blog-worthy ;)

Cheesy Chicken with Roasted Marinated Tomatoes

Dinner for two anyone?
 
Ingredients:
  • (2) chicken breasts
  • 1/2 cup 6 cheese blend
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup minced garlic
  • (1) whole tomato sliced
  • (1) egg
  • salt and pepper to taste


 
 
 
You will also need two bowls, one for the egg wash, one for dry ingredients and your favorite baking dish.
 
 
Blend these together, slice your tomatoes and let them soak.
 
 
 
 
 
Blend these together for your chicken.
 
 
After your tomatoes have soaked about 20 mins, use the same wash for your chicken.
 
 
Then toss them around in your cheese mixture.
 
 
Don't forget to dump the cheese mixture remains on top ;)
Add a dash more salt and pepper here for some added flavor.
 
 
Bake the chicken 350 degrees for 20 minutes, depending on the thickness.
 
 
Add your 'maters and cook another 10 minutes.
(I sprinkled some basil on the tomatoes.. they make an awesome pair)
 
 
 
Pair with your favorite veggies. We had asparagus and sautéed mushrooms and onions.

Life Update

Well, as you all may know, we celebrated our 3rd anniversary on September 1st.
We had a nice dinner at Lola's Seafood, just about two miles from the house.
 
 
Lol I had to share this one too.. Look how curious Chino always is. He never wants to be left out of something :)


With summer wrapping up in a few weeks, you can start to feel the difference outside.. Although it stays hot hot hot here almost year round, there's a fall-ish type of feel outside.
 
 
Bring on the pumpkin flavored everything!!
 
Oh also, I've been so excited to share this: a huge congrats to my honey for his promotion. Here's a picture moments before his interview.. Got to loveee a man in uniform.
