Banana Bacon Bread
Did you ever hear of such a wonderful thing? I hope everyone had a wonderful time celebrating the holidays! Thanksgiving was great for us. We went on our yearly trip to Michigan (where the guys killed 3 deer). We stopped at my mom's house in Tennessee on the way home and got to see my mom's side of the family. Christmas we celebrated with the Stokes family the Sunday before. Mom came down for Christmas and we smoked a ham on Christmas eve. On Dad's side of the family we had our yearly party. I couldn't have asked for a better holiday. I kept the ham bone so I will be making the French onion soup again this year (can't wait). We went to Wyoming and wow, what an amazing place.
 
I was in line at the grocery store when I saw a recipe for apple bacon bread and thought it sounded good, but apple isn't my favorite fruit; bananas are! I was already picking up some bananas so I figured I could try something new out, a banana bacon bread. I pulled the bananas apart and tried to wait until they turned brown (I wasn't as patient as I was planning on being). There's a few brown spots, that counts right?
 
 
Ingredients:
  • 3 ripe bananas (mashed)
  • 1/2 stick butter (softened)
  • 1 cup brown sugar
  • 4 tsp. olive oil
  • 1/2 cup milk
  • 2 cups all purpose flour (I used Bob's red mill almond flour)
  • 2 eggs
  • 1 tsp salt
  • 1 tsp baking powder
  • secret ingredients ;)

 
Here are the secret ingredients.. milk chocolate morsels (2 handfuls)..
 
 
Chopped hazelnuts (2 handfuls)..
 
 
and Black Label maple bacon. This is our favorite kind of bacon. It's expensive, but well worth it. Slice three pieces in half, long ways. Then cut them into tiny pieces and fry in a pan.
 
 
Don't forget to drain the grease. This is our handy-dandy coffee cup where our leftover grease for the month goes.
 
 
Combine first 4 ingredients. Slowly add next 5 and fold in the special ingredients. Put in a greased loaf pan in a 350 degree oven for 20-25 mins or until the center is set.
 
 
Like my new oven mitt? Craig got it for me on our vacation in Wyoming. They love huckleberries there and when we first started dating he had me listen to Toby Keith "Huckleberry". It stuck :)
 
 
Chino has a new baby sister. Isn't she the sweetest? They are inseparable. Her name is Gia.
 
 
 
 
 
I baked the bread at 350 degrees for what turned into 40 mins. I did 25 mins first and it was still soft so I kept checking every 10 mins after that. Don't let it burn.
